Lime & Coriander Scallops recipe

Scallops are fried with coriander, garlic, lime and chilli in this simple starter. Serve them up with some crusty bread and butter, or simply with a lightly dressed green salad.


  • 16 scallops, prepared
  • 4 garlic cloves
  • 2 tsp. freshly chopped red chilli
  • Juice of 1 lime
  • Small handful freshly chopped coriander
  • 2 tbsp. olive oil
  • Salt and pepper


  1. Mince the garlic cloves. Heat the olive oil in a frying pan and fry the scallops for 1 minute on one side, then flip them over.

  2. Sprinkle the scallops with the mince garlic and chilli and cook for 1 minute.

  3. Squeeze the lime juice over the scallops, fry for a little longer, then season well with salt and pepper.

  4. Sprinkle the coriander over the scallops to serve.

If you like, use lemon juice instead of lime and a green chilli instead of a red chilli. Use the freshest possible scallops for the best possible flavour. Recipe serves 4 as a starter.
