Scallops with Creamy Ginger Sauce recipe

Ginger lends a warm spiciness to all meals, making it excellent in both sweet and savoury dishes. In this recipe, scallops are cooked and served with a creamy ginger sauce made with ginger, wine and cream.

Ingredients:

  • 500g scallops, cleaned
  • 100ml white wine
  • 100ml double cream
  • 2 spring onions
  • 1 carrot
  • 60g butter
  • 2 tbsp. minced ginger
  • Salt and pepper

Directions:

  1. Finely dice the carrots and spring onions. Melt 30g of the butter in a frying pan and cook the spring onions until softened. Add the carrot and cook for 30 seconds, then stir in the ginger and wine. Once simmering, add the cream, salt and pepper.

  2. Cook until the sauce has reduced by half, then add the scallops and simmer for 1-2 minutes until cooked through to your liking.

Instead of ginger, you could make this a garlic sauce - omit the ginger and use 1 tbsp. minced garlic instead. Recipe serves 4.
